Jim's Basic Banana Bread |

1. | 3 | Large | Peeled, overripe bananas |
2. | 1 | Extra large | Egg |
3. | 1 | Cup - plus? | Sugar - brown sugar may be used to preference |
4. | 1 | Oz. | Dark Rum |
5. | 1 | Teaspoon | Pure Vanilla Extract |
6. | 1/4 | Cup | Vegetable oil |
7. | 1/8 | Teaspoon | Salt |
8. | 1/4 | Teaspoon | Coriander - optional |
9. | 1/4 | Teaspoon | Mace |
10. | 1/4 | Teaspoon | Nutmeg |
11. | 1/2 | Teaspoon | Cinnamon |
12. | 1/2 | Teaspoon | Baking soda |
13. | 1 1/4 | Teaspoon | Baking powder |
14. | 1 1/2 | Cups | Flour - or 3/4 cup whole wheat, 3/4 cup white |
Experiment: Add tangerine zest, peaches, sweetened cranberries, cashews, etc. | |||
Pre-heat oven to 350 F. Add ingredients to mixing bowl in order given. Using KitchenAid paddle, or potato masher if by hand, mix thoroughly until banana chunks are 1/4" or less. Pour batter into oiled and Cream of Wheat-coated bread pan, sprinkling extra Cream of Wheat on top of batter. Bake about 50 minutes or more, until toothpick comes out clean. Remove from pan; cool on rack. |
